One Pan Pesto Shrimp

I have to admit this...I have a full time job that isn't a 9 to 5. I have a daughter with activities and a husband PLUS fitness goals that don't include eating fast foo So weeknight meals that come together in a flash & please the Mr and the little one.

Tonight was no different. After a quick run to Target for a couple things I put together a quick and easy stir fry using the following:


  • 4 cloves Garlic, chopped. Yes, 4.

  • 2 large Shallots, minced.

  • 2 Pounds Frozen Shrimp (thawed)

  • 2 packs Zucchini Noodles (no kidding, I paid for the pre-cut ones)

  • 1 package Grape Tomatoes, sliced in half

  • 2 tablespoons Pesto (from a Jar.)

  • 3-4 fresh Basil leaves, sliced

  • Feta

  • Salt & Pepper to taste


Cook the shallots and garlic until shallots are translucent.

Add the shrimp, season with salt and pepper. Cook until solid in color.

Stir in sliced tomatoes, pesto. Stir to combine.

Toss in the zucchini noodles, stir to coat.

Serve with basil and Feta as a garnish.
